Alternative Pumpkin Pie... use oatflakes instead of rice flakes

Recipe Ingredients for Pumpkin Pie

150 g rice flakes, fine
80 g brown rice flour
60 g ground almonds
100 ml sunflower oil, natural
100 ml organic maple syrup
950 g pumpkin
2 eggs, free-range
1/2 tsp cinnamon
1/2 tsp mixed spice
70 ml organic maple syrup

Recipe Directions for Pumpkin Pie

  1. Oven 190c

  2. Oil 11.5" rectangular cake tin

  3. Dice pumpkin into 2" pieces and place oiled oven tray

  4. Cook in oven on top shelf for 20 mins and set aside

  5. In mixing bowl mix rice flakes, rice flour and ground almonds.

  6. Stir in sunflower oil and maple syrup and mix well.

  7. Add a little water to bring ingredients together into a stiff dough.

  8. With dampened fingers, press the mixture firmly into the oiled cake tin, bringing it evenly up the sides of the tin.

  9. Bake in preheated oven for 20 mins. Set aside.

  10. Place the roasted pumpkin, eggs, cinnamon, mixed spice and maple syrup and blend until all the ingredients are smooth and creamy.

  11. Pour into pre-baked pie case.

  12. Return to the oven and the bake on the centre shelf for 40 mins.
