Pumpkin pie tasting pudding with less work and no eggs.

Recipe Ingredients for Pumpkin Pie Pudding (Vegan)

3 cup Pumpkin
1 cup Sugar
2/3 cup Cornstarch
3 cups soymilk
1/8 tsp Allspice, Ground
1 1/2 tsp Cinnamon, Ground
1/2 tsp Ginger, Ground
1 tsp salt

Recipe Directions for Pumpkin Pie Pudding (Vegan)

  1. Combine milk, spices and cornstarch in pan and whisk together well.

  2. Bring to a low boil stirring continuously.

  3. Add sugar and reduce to a simmer. Continue stirring.

  4. Add pumpkin and heat through.

  5. Pour into dessert cups or large bowl.

  6. Place plastic wrap over pudding (along surface of pudding to reduce chance of it getting a skin on it).

  7. Place in refrigerator to cool and set.

  8. (Good both cold and warm.)
