I found this on VegWeb.com. I tripled the recipe for our use. Also I made it half and half 1% milk and water to give it a creamer taste.

Recipe Ingredients for Pumpkin Pie Oatmeal

3 cup water
1 1/2 cup Oats
3/4 cup pumpkin puree
1 dash cinnamon
1 dash pumpkin pie spice
3 T walnuts (optional)
3 T brown sugar

Recipe Directions for Pumpkin Pie Oatmeal

  1. Boil water and add oats.

  2. Reduce heat and cook oatmeal until most of the water is absorbed.

  3. Mix in pureed pumpkin and sweeten to taste with brown sugar, cinnamon, and pumpkin pie spice (or nutmeg).

  4. Top with walnuts.
