Makes 1 serving

Oatmeal with pumpkin, milk, spices. Options include adding almonds, maple syrup, whip cream, yoghurt or protein powder.

Recipe Ingredients for Pumpkin pie oatmeal with milk version

1/4 cup skim milk
6 tablespoons water
1/4 cup oatmeal
1 pinch cinnamon
1 pinch nutmeg
1/8 cup canned pumpkin
1 tablespoon splenda

Recipe Directions for Pumpkin pie oatmeal with milk version

  1. In a medium sauce pan over medium heat, bring the milk and water to a gentle boil. Add the oats, cinnamon and nutmeg. Reduce heat low and simmer for 8 minutes or until desired consistency is reached.

  2. Stir in the pumpkin, almonds (optional-1/8 cup, will add more calories!) and splenda (maple syrup if you want to go that route).

  3. Optionally, you can add vanilla protein powder.

  4. Eat as is or serve it with a little whipped cream or low fat ice cream on top, or greek yoghurt - just like you'd have on pumpkin pie. Enjoy!
