Healthier version of traditional favorite

Recipe Ingredients for Pumpkin Pie in Graham Cracker Crust: Makeover

1 c graham cracker crumbs (8 sheets)
2 T sugar
2 T wheat germ
2 T ground flaxseed
2 T butter, melted
1 egg white
15 oz pumpkin
12 oz fat free evaporated milk
2/3 c brown sugar
2 eggs
1 1/2 tsp pumpkin pie spice
1 tsp vanilla

Recipe Directions for Pumpkin Pie in Graham Cracker Crust: Makeover

  1. CRUST:

  2. Combine dry crust ingredients in food processor. Add wet ingredients and mix until blended.

  3. Press crust into greased 9" pie dish. Bake 350'F for 8min. Cool 15min before using.

  4. FILLING:

  5. Combine all filling ingredients and whisk or blend until smooth. Pour into crust. Bake 375'F 30-40min until sides are set and center just jiggles.
