Ginger Snap crust in 10" pie plate or 2 qt baking dish (dish will require more baking time). Very good Praline topping (Adj calories if opt no topping).

Recipe Ingredients for Pumpkin Pie GF, CF

2 oz ginger snaps, 4 GF cookies
2 tbl butter
2 eggs
1/2 cup sugar
1 tsp cinnamon
1/2 tsp ginger
1/8 tsp nutmeg
1/8 tsp cloves
1/2 tsp salt
16 oz pumpkin
12 oz evaporated GOAT milk
1/2 tbl butter
3 tbl pecans
3 tbl brown sugar

Recipe Directions for Pumpkin Pie GF, CF

  1. Preheat oven to 400 (for glass dish)

  2. Crush cookies.

  3. Spread in bottom of pie plate.

  4. Drizzle with melted butter.

  5. Whip eggs, slightly in medium bowl.

  6. Beat in remaining ingredients.

  7. Pour pumpkin filling onto crust.

  8. Bake 15 min at 425 degrees.

  9. Reduce heat to 350 degrees for 45 min.

  10. Until knife inserted into middle, comes out clean.

  11. Or Bake 35 min at 350 degrees.

  13. Praline topping: Soft butter, mixed with chopped pecans and brown sugar.

  14. Return to oven for 15 min or until knife comes out clean.

  15. Variation: 3 eggs and 1 1/2 cups regular goat milk, instead of evaporated.
