Delicious and pretty low calories without the crust!

Recipe Ingredients for Pumpkin pie filling

425 g Libby's pumpkin filling
12 oz evaporated milk
2 large eggs
3/4 c sugar
1/2 t salt
1 t cinnamon
1/2 t ground ginger
1/4 t ground cloves

Recipe Directions for Pumpkin pie filling

  1. Preheat oven to 350F

  2. beat eggs

  3. combine sugar, salt, cinnamon, ginger and cloves

  4. add pumpkin to eggs, then add dry ingredients and blend well.

  5. pour into a low baking dish and cook until a knife poked in the center comes out clean. The deeper the dish, the longer it needs to cook. In a 8" casserole, it took almost 2 hours!
