Recipe Ingredients for Pumpkin Pie Cups

29 oz canned pumpkin
1 egg
1 cup 1% milk
2 tbsp brown sugar
1/3 cup sugar free maple syrup
1/2 cup Splenda
1 tsp cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
1/2 cup whole wheat flour
56 grams instant oatmeal original flavor
3/8 cup Promise light spread
1/4 tsp salt

Recipe Directions for Pumpkin Pie Cups

  1. Preheat oven to 275 degrees F.

  2. Spray four glass baking cups (about 16 oz each) with nonstick cooking spray.

  3. With a hand mixer, combine pumpkin, egg, cool whip, 2 tablespoons of the brown sugar, Splenda, and spices.

  4. Chop walnuts with a food chopper until finely ground.

  5. Combine walnuts, flour, remaining brown sugar, and Promise in a separate mixing bowl. Use two butterknives to cut the flour into the Promise.

  6. When the crust mix resembles coarse crumbs, divide into four.

  7. Press each serving of crust mix into the bottom and up the sides of the baking dishes.

  8. Pour the pumpkin mix onto the crusts.

  9. Bake for 30 mins, or until top of pies are browned around the edges.

  10. Cool slightly and serve with whipped topping, frozen yogurt, or lowfat ice cream!
