Recipe Ingredients for pumpkin pie w/ cream cheese crust

2 cups pumpkin
1/2 cup dark brown sugar
3 large eggs
1/2 cup heavy cream
1 1/2 teaspoons apple pie spice
1/2 teaspoon salt
2 tablespoons salted butter, softened
1/2 cup cream cheese
1 1/2 cups all-purpose flour
1/2 cup butter

Recipe Directions for pumpkin pie w/ cream cheese crust

  1. Crust: Soften cream cheese and butter and mix together incorporating flour a little at a time.

  2. Roll out half of dough with a rolling pin between 2 wax papers. Transfer to a 9-inch pie plate and prick with fork before half-baking to prevent shrinkage. Bake for about 10 minutes at 350 degrees F (175 degrees C).

  3. Filling: Place 2 cups of squash or pumpkin in a food processor and process until smooth. Add the brown sugar (may use less), eggs, cream, apple pie spice, salt, and butter (optional); process until smooth.

  4. Pour the mixture (yields enough for two crusts) into the pie crust. Bake until the filling rises, about 1 hour.
