A Thanksgiving pumpkin pie cheese cake combo my Mother came up with 35 years ago because I hated pumpkin pie.

Recipe Ingredients for Pumpkin Pie in a Cake Pan

2 c cinnamon graham crackers crushed
1/2 c sugar
1/2 c margarine light melted
1 1/2 c sugar
16 oz cream cheese
4 eggs
2 c pumpkin pie canned
3 egg yolks
1/2 c sugar
1/2 c skim milk
1/2 tsp salt
1/4 c water
1 envelope gelatin plain

Recipe Directions for Pumpkin Pie in a Cake Pan

  1. Crust: Mix crushed graham crackers ( about 24 crackers ) with sugar and margarine. Press into the bottom of a 13x6 casserole dish.

  2. 1st layer: Beat sugar, cream cheese, and eggs. When thoroughly combined pour over crust and bake at 350 for 30-35 minutes.

  3. 2nd layer: Cook in pot on top of stove- 2 c pumpkin pie mix with egg yolks, sugar, milk, water, salt, and plain gelatin. Until big thick bubbles bloop through. Continue to cook and stir for another 5 minutes. Remove from heat and set aside.

  4. When cake is cooled, spread pumpkin mixture over the top. Refridgerate for a minimum of 2 hours. preferably overnight.

  5. Slice and serve with a dollop of whipped cream.
