I will be making it later if good I will update to say so. it is tweeked from 3 I have seen online. Edit it was a bit sweet and needed more cinnamon/ginger/nutmeg. next time I will double the pumkin and spices every thing elase will be the same. *** I will not change the recipe till I make it.***

Recipe Ingredients for Pumpkin pie 166 calories with crust

1 1/2 cups vanilla soy milk
15 ounces canned pumpkin
1/2 cup brown sugar Splenda
3/4 c egg whites
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
336 g low fat graham cracker pie crust(2 crusts)

Recipe Directions for Pumpkin pie 166 calories with crust

  1. Whisk pumpkin and spices (cinnamon, ginger, nutmeg, cloves, and salt) together, whisk in the brown sugar.

  2. Once the mixture is fully blended

  3. Add soy milk and whisk some more.

  4. Place the three eggs into a blender and blend on high for 3 seconds. With blender on low, slowly add pie filling from pot.

  5. Pour filling into pie crust and bake at 350F for 35 minutes or until center of pie is jiggly when pie is rotated gently. Refrigerate.
