Recipe Ingredients for Pumpkin Pepperkakor

9 oz. unbleached all purpose flour
100 g dark brown sugar
84 1/4 g molasses
1/2 tsp baking soda
1/4 tsp baking powder
8 tbsp butter
3/4 tbsp ground cinnamon
3/4 tbsp ground ginger
1/4 tsp ground clove
1/4 tsp ground cardamom
1/4 tsp ground black pepper
1/4 tsp ground allspice
60 g pumpkin puree

Recipe Directions for Pumpkin Pepperkakor

  1. Mix flour, baking soda, baking powder, spices and dark brown sugar in food processor.

  2. Add softened butter in pieces and pulse until it resembles a fine meal (about 15 seconds.)

  3. Add molasses and pumpkin puree and mix until evenly moistened.

  4. Roll out on freezer or parchment paper to desired thickness.

  5. Place in freezer for 15 mins before cutting out shapes or they won't hold together.

  6. Bake at 350 for 9 minutes if thick and 325 for 9 mins if thin.
