Southern pumpkin pecan muffins (The Joy of Muffins)

Recipe Ingredients for Pumpkin pecan muffins

2 3/4 cup Enriched Unbleached White Flour
3 tsp Baking Powder
1 tsp Baking Soda
1 tsp Cinnamon, Ground
1 tsp Nutmeg, Ground
1 tsp Ginger, Ground
1 cup Chopped Pecans
2 large Egg, Whole
2 cup Pumpkin
196 grams Yoghurt
1/4 cup Molasses
3/4 cup, unpacked Sugars, Brown

Recipe Directions for Pumpkin pecan muffins

Combine the dry infredients and mix well. In another bowl, whisk the eggs, pumpkin, sour cream (or yoghurt), molasses and sugar until sugar is dissolved. Pour liquid ingredients into center of dry ingredients. Stir quickly until flour disappears and spoon into greased muffin tins. Bake until lightly brown (375 degrees for 25 minutes).
