Recipe Ingredients for Pumpkin Pancakes

1 cup whole wheat flour
20 7/10 g brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
3/4 cup soy milk
1/2 cup pumpkin puree
1 egg
1 tablespoon unsweetened applesauce
1 tablespoon vinegar
1/4 cup pecans, chopped

Recipe Directions for Pumpkin Pancakes

  1. In a separate bowl, mix together the soy, pumpkin, egg, applesauce and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine. Throw in the pecans and barely fold them in.

  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot
