Paleo approved recipe for pancakes. These are actually quite good, with a delicate and moist texture.

Recipe Ingredients for Pumpkin pancakes

1/4 cup flaxseed meal
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon, a pinch of nutmeg
1/4 cup canned pumpkin
3 eggs
1 tablespoon coconut milk
1 tablespoon coconut oil

Recipe Directions for Pumpkin pancakes

  1. Make sure your ingredients are room temp, or they will harden the coconut oil and won't mix properly.

  2. Combine all dry ingredients into a bowl. In another, mix the pumpkin with the eggs, then thoroughly mix in the coconut oil and milk. Add the dry ingredents to the wet mixture and stir to combine.

  3. Using a small ladle, drop batter onto a hot oiled griddle. The batter won't spread much on it's own, so use the back of the ladle to spread it out. These do not bubble like regular pancakes, so keep an eye on the edges and flip when needed.
