Makes un chingo of pumpkin pancakes. They taste good!!!

Recipe Ingredients for Pumpkin Pancakes

2 cups flour
4 tsp baking powder
1/2 tbsp sugar
1 tsp salt
3 tbsp apple butter
1 tbsp salted butter
1 cup pumpkin
4 eggs
1 tsp cinnamon
1 1/2 cups skim milk

Recipe Directions for Pumpkin Pancakes

  1. Combine all wet ingredients except egg whites.

  2. Combine all dry ingredients.

  3. Beat egg whites until stiff.

  4. Combine wet and dry until just wet.

  5. Fold in egg whites.

  6. Cook away.
