delicious and moist, make small ones to make 4 mini pancakes per serving

Recipe Ingredients for Pumpkin pancakes

1 cup cup pumpkin
1 tsp cinnamon
1 tsp baking powder
2 eggs
1 cup cup quick oats
1 cup+8+fl+oz cup water
2 packet tbsp Truvia

Recipe Directions for Pumpkin pancakes

  1. put all ingredients into a blender, blend until smooth

  2. coat a pan and heat on medium. Put small dollops of batter and cook until bubbles form. Flip and cook until not runny. Makes 4 mini pancakes per serving, 5 servings.
