Hearty pumpkin pancakes that are perfect for a cool autumn morning. Sprinkle pumpkin pie spice and use a dollop of Cool Whip, with sugar-free syrup.

Recipe Ingredients for Pumpkin Pancakes

1 1/2 cup whole wheat flour
2 T. brown sugar
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 cup water
2 T. unsweetened applesauce
1/2 cup 1% milk
1/2 cup pumpkin

Recipe Directions for Pumpkin Pancakes

Combine first 6 ingredients in a bowl and last 4 ingredients in a separate bowl until well combined. Add the pumpkin mixture to the dry ingredients and mix well. Heat griddle on 275 and pour 1/4 cup batter per pancake.
