Fluffly pancakes with a hint of pumpkin and cinnamon

Recipe Ingredients for Pumpkin Pancakes

1 1/4 c flour
2 T sugar
2 t baking powder
1 t salt
1/2 t cinnamon
1 egg
1/4 cup pumpkin puree
12 ounces evaporated skim milk
2 T oil

Recipe Directions for Pumpkin Pancakes

  1. Heat griddle to 325

  2. Mix all dry ingredients together in bowl.

  3. Add wet incredients and mix until incorporated, but do not over-mix (I use a large whisk and give it a couple of turns around the bowl and that does the trick).

  4. Spray griddle with cooking spray and drop 1/4 cup batter for each cake.

  5. Cook on one side until bubbles form on the surface throughout the cake (not just on the sides). Then flip for another minute.

  6. Should make 15 cakes.
