A favorite fall breakfast at our house.

Recipe Ingredients for Pumpkin Pancakes

2 cups flour
2 tbsp. packed brown sugar
1 tbsp. baking powder
1 1/4 tsp. pumpkin pie spice
1 tsp. salt
12 oz. fat free evaporated milk
1/2 cup canned pumpkin
1/4 cup water
1 egg
1 tsp. canola oil

Recipe Directions for Pumpkin Pancakes

  1. Combine flour, brown sugar, baking powder, pumpkin pie spice and salt in large bowl.

  2. Combine evaporated milk, pumpkin, water, egg, and oil in small bowl; mix well.

  3. Add wet mixture to dry ingredients.

  4. Stir until just moistened (batter may be lumpy).

  5. Heat skillet over medium heat.

  6. Pour batter onto griddle and cook until bubbles begin to break on the surface. Turn and cook for 30 to 120 more seconds.

  7. Repeat. =)
