One of my most favorite fall breakfasts!

Recipe Ingredients for Pumpkin Pancakes

1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt

Recipe Directions for Pumpkin Pancakes

  1. Mix together the milk, pumpkin puree, egg, oil, and vinegar.

  2. In a separate bowl, combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt.

  3. Stir into the pumpkin mixture just long enough to combine.

  4. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approx. 1/4 cup for each pancake. Brown on both sides.

  5. Enjoy!
