Pumpkin Pancakes. Great in the fall!

Recipe Ingredients for Pumpkin Pancakes

2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 1/2 tsp pumpkin pie spice
1/2 teaspoon salt
2 cups skim milk
1 cup pumpkin puree
1 egg
2 tablespoons canola oil
2 tablespoons apple cider vinegar

Recipe Directions for Pumpkin Pancakes

  1. Combine wet ingredients in food processor: milk, vinegar, egg, pumpkin, oil. Pulse on high until combined. Continue to pulse until volume is added.

  2. Separately, combine sugar, flour, soda, powder, spices and salts.

  3. Add dry to wet. Pulse until combined.

  4. Using 1/4 to 1/3 cups, drop on lightly oiled griddle over medium heat.

  5. Yield: Approx 15 pancakes
