Recipe Ingredients for Pumpkin Pancakes

2/3 cups all purpose flour
1 tbsp brown sugar
3/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground allspice
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp salt
1/2 cup milk
1/3 cup pumpkin
1 egg
2 tsp canola oil
2 tsp vinegar

Recipe Directions for Pumpkin Pancakes

  1. In a separate bowl, mix together milk, pumpkin, egg, oil and vinegar. Combine flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.

  2. Heat a lightly oiled griddle or frying pan over medium heat. Pour a scoop of batter onto griddle, using approx. 1/4 cup for each pancake. Brown both sides, serve hot.
