Recipe Ingredients for Pumpkin Pancakes

1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1/4 tsp nutmeg
2 1/2 ml ground cinnamon
1/4 teaspoon ground ginger
1/5 teaspoon salt
3/4 cup soy milk
1/2 cup pure pumpkin
1 egg
1 tablespoon flax seeds
1 tablespoon vinegar

Recipe Directions for Pumpkin Pancakes

  1. In a separate bowl, mix together the milk, pumpkin, egg, flax seeds and vinegar.

  2. Combine the flour, baking powder, baking soda, cloves, nutmeg, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.

  3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
