Recipe Ingredients for Pumpkin Oatmeal Sunseed Muffin II

1 cup whole grain flour
1 cup rolled oats
1/2 cup flaxseed meal
4 scoops Whey Protein Powder
2 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp clove
1/4 tsp allspice
1 cup canned pumpkin
1 large egg, slightly beaten
1 cup Apple Juice, Unsweetened
1/4 cup sunflower seeds

Recipe Directions for Pumpkin Oatmeal Sunseed Muffin II

  1. Pre-heat oven to 425 degrees. Prepare a muffin pan for 12 muffins.

  2. Combine flour,oats, flax, powder, spice and soda. Mix well.

  3. In a separate bowl, combine pumpkin, egg, (1/4 C milk) and juice (or 1/2 C concentrate); add to dry ingredients and stir only until ingredients are combined. Stir in sunflower seeds. Fill muffin cups 3/4 full with batter.

  4. Bake 18 to 20 minutes
