From the American Heart Association. Can be refrigerated for up to 3 days. Add a little fat free milk when reheating.

Recipe Ingredients for Pumpkin Oatmeal

1 serving Coach's Oats - 2 cups
4 oz Light Brown Sugar
1.5 tbsp Cinnamon, Ground
0.75 tsp Nutmeg, Ground
1 cup Pure Pumpkin
48 oz Water
8 serving Half and Half Fat Free
1 cup (not packed) Raisins, Seedless
1 tsp Vanilla Extract
1 cup Chopped Walnuts

Recipe Directions for Pumpkin Oatmeal

  1. Spray 4qt slow cooker with oil.

  2. Stir together oats, sugar, cinnamon and nutmeg. Stir in pumpkin. Gradually stir in half and half and water, 1 cup at a time. Stir in raisins and vanilla.

  3. Ladle into slow cooker. Cook, covered, overnight or 7-8 hours. Serve with 1/8 cup walnuts.
