Low fat, dairy-free muffins that are not overly sweet.

Recipe Ingredients for Pumpkin oatmeal muffins

1 cup spelt flour, whole grain
1 cup rolled oats
4 tbsp brown sugar
1 tbsp maple syrup
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla
1 egg
1 tbsp grapeseed oil
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp allspice
1 tbsp flax meal
1 1/8 cup pumpkin
2 tbsp apple butter
1 cup blueberries

Recipe Directions for Pumpkin oatmeal muffins

Mix wet ingredients with brown sugar and flax meal. Beat well. Mix dry ingredients. Add dry ingredients to wet ingredients, stirring until just combined. Fill greased muffin tins. Bake at 375 for about 20 - 22 minutes.
