Recipe Ingredients for Pumpkin Oatmeal Cookie

1/2 cup unsweetened applesauce
1 cup Splenda
1 teaspoon vanilla extract
1 egg
1 cup pumpkin puree
2 1/4 cups rolled oatmeal
2 teaspoon baking powder
1 teaspoon baking soda
1/2 cup dried cranberries
1 teaspoon ground cinnamon
1/2 tablespoon nutmeg
1/2 tablespoon pumpkin pie spice

Recipe Directions for Pumpkin Oatmeal Cookie

  1. Preheat oven to 375 F (190 C). Lightly spray cookie sheets.

  2. In a large mixing bowl, cream applesauce and sugar until light and fluffy. Beat in vanilla, egg and pumpkin. Add the oatmeal, baking powder, baking soda, and spices; stir into mixture until well blended. Add the cranberries and stir into mixture. Drop cookies on baking sheets.

  3. Bake 10 to 12 minutes.
