3.5 cup dry Old Fashioned Quaker Oats
8 Tbsp Kelapo Virgin Coconut Oil
8 serving Molasses
2 tsp Pumpkin Pie Spice
0.5 tsp Cinnamon, Ground
1 tsp Vanilla Extract
1.5 cup Pumpkin
8 tbsp Chocolate Chips
1 Teaspoon Baking Powder
1 tsp Leavening Agents, Baking Soda
0.5 tsp Salt, Table
1 large Egg, Whole

Recipe Directions for Pumpkin Oatmeal Chocolate Chip Cookies

  1. Mix pumpkin, coconut oil, molasses, vanilla, and beaten egg.

  2. Process 1.5 cups of oats into oat flour.

  3. Mix the rest of the oats, spices, salt, baking soda, and baking powder.

  4. Add wet & dry ingredients together with chocolate chips.

  5. Bake 15 minutes at 350.
