Recipe Ingredients for pumpkin oatmeal breakfast cookies

1 egg
1 cup whole wheat flour
1 cup dry oats
3 tsp Truvia
6 oz Nonfat Vanilla Yogurt
1 cup pumpkin puree
1/2 tsp pumpkin pie spice
1/4 tsp salt
1 tsp baking soda
1/2 cup Special Request Skim Plus Milk

Recipe Directions for pumpkin oatmeal breakfast cookies

  1. preheat oven to 350 degrees

  2. in a bowl beat egg. add pumpkin puree, yogurt and milk and mix

  3. sift flour, add oats, truvia, salt, spice and soda.

  4. add wet ingredients to the dry and combine.

  5. (optional) mix in raisins or cranberries for added sweetness.

  6. drop spoonfuls of batter on cookie sheet and bake for 20 minutes
