Pumpkin pancakes perfect for a lazy autumn Saturday morning

Recipe Ingredients for Pumpkin Oat Pancakes

1/4 c dry old fashioned oats
1/4 c canned pumpkin
1 egg
1/2 tsp baking powder
1/2 tsp pumpkin pie spice
1/4 tsp cinnamon

Recipe Directions for Pumpkin Oat Pancakes

  1. mix all ingredients in a bowl. batter should be lumpy and a bit thicker than regular pancake batter.

  2. heat skillet to medium heat and spray generously with non-stick spray.

  3. spoon batter into skillet and cook, flipping once.

  4. serve with a scoop of vanilla yogurt and a dab of nutella. yummmmm!
