From another member in food thread. Sorry, can't remember name. I used only 1 packet Splenda vs 2 (too sweet for me.) I used ground flax seed plus wheat germ. Thank you! Very yummy!

Recipe Ingredients for Pumpkin Oat Pancakes

1/3 cup oats
1/4 cup pumpkin
3 egg whites
1/2 teaspoon cinnamon
1 packet Splenda
1 teaspoon vanilla
16 grams wheat bran
6 grams ground flax seed
1 pinch baking soda
1 pinch baking powder

Recipe Directions for Pumpkin Oat Pancakes

  1. In a bowl combine oats, pumpkin, egg whites, cinnamon, Splenda, and vanilla extract. Whip with a fork and let it sit for 5 minutes to let the oats soften.

  2. In a separate small bowl, stir together wheat bran, ground flax seed, baking soda, and baking powder.

  3. Add dry ingredients to the wet ones and stir just until combined.

  4. Spray a non-stick skillet with non-fat cooking spray. Heat over medium high heat. Spoon mixture into heated skillet and cook 2 or 3 minutes on each side, flipping once.
