Recipe Ingredients for Pumpkin Oat Muffins

1 1/4 cups white flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 tsp ground cinnamon
1 cup rolled oats
1 egg
1 egg white
3/4 cup pumpkin puree
3/4 cup evaporated milk
1/2 cup pineapple juice
2 tablespoons canola oil
1/4 cup brown sugar
4 teaspoons apricot preserves

Recipe Directions for Pumpkin Oat Muffins

Preheat the oven to 400. Prepare a muffin tin. In a large bowl, mix together the dry ingredients. In another bowl, lightly beat eats and add remaining ingredients except for apricot preserves. Fold in the wet ingredients to the dry and mix until just combined. Fill the muffin tins. Add about half a teaspoon of apricot preserves on the top of each muffin. Bake for 20 to 25 minutes.
