Yummy pumpkin muffins. Can sprinkle with mini chocolate chips or chopped pecans before baking to make them extra special.

Recipe Ingredients for Pumpkin Oat Muffins

2 c whole wheat flour
2/3 c brown sugar
1/2 t baking soda
2 t baking powder
1/2 t salt
2/3 c oatmeal
1 c 1% milk
3 T olive oil or canola oil
2 T apple sauce
1 egg
15 ounce pumpkin (canned)
1 t pumpkin pie spice

Recipe Directions for Pumpkin Oat Muffins

Mix dry ingredients. In another bowl, mix wet ingredients. Add wet to dry. Spray Pam in muffin pan. Bake on 400 degrees for 30 minutes or until toothpick comes out clean.
