Recipe Ingredients for Pumpkin Oat Muffins

1 cup rolled oats
1 1/4 cups whole wheat flour
1/4 cup all purpose flour
1/4 cup white sugar
1/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon cloves
1/8 teaspoon ginger
1/4 teaspoon salt
2 egg whites
1/3 cup unsweetened applesauce
1 cup pumpkin puree
3/4 cup milk

Recipe Directions for Pumpkin Oat Muffins

  1. In a bowl, mix together the rolled oats, whole wheat flour, white flour, white sugar, brown sugar, baking powder, baking soda, cinnamon, allspice, cloves, ginger and salt.

  2. In another bowl, beat the egg whites lightly. Then mix in the applesauce, milk and pumpkin puree.

  3. Add the dry ingredients to the wet ingredients. Mix until just combined.

  4. Grease or line a 12 cup muffin tin and divide the batter.

  5. Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.
