streusel topping: adds 16 calories per muffin 1/4 c oatmeal 1 t brown sugar 1 T butter 1/8 tsp pumpkin spice

Recipe Ingredients for Pumpkin Oat Muffins

1 1/2 c flour
1 c rolled oats
3/4 c brown sugar
1/2 c chopped pecans
1 T baking powder
1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp ginger
1/2 tsp baking soda
1/2 tsp salt
1 c pumpkin
3/4 c 2% milk
1/3 c canola oil
1 large egg

Recipe Directions for Pumpkin Oat Muffins

  1. mix dry and wet ingredients separately, then combine

  2. fill muffin cups till almost full

  3. sprinkle streusel

  4. bake 400 22-25 minutes

  5. cool on rack 5 minutes

  6. aserve warm
