small, moist muffins. usually made with chia seeds and agave nectar instead of flax and honey.

Recipe Ingredients for pumpkin oat muffins

2 cups pumpkin puree
1 1/2 cups oat flour
1 tablespoon flax seeds
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/2 cup honey
2 eggs
2 tablespoons canola oil
1 teaspoon baking soda

Recipe Directions for pumpkin oat muffins

  1. mix dry ingredients. (grind rolled oats & seeds in coffee mill to make flour). combine wet ingredients. stir together. pour into sprayed muffin tins (12 regular plus 12 minis)

  2. Bake 350 20-25 minutes until inserted toothpick comes out clean.
