Recipe Ingredients for Pumpkin Oat Bran Muffins

3 cups oat bran, unprocessed
1 cup brown sugar, firmly packed
1 cup flour
4 teaspoons baking powder
2 teaspoons pumpkin pie spice
4 t. orange zest
1/2 teaspoon salt
15 oz. pumpkin, canned
1/4 cup applesauce
1 cup skim milk
2 eggs, lightly beaten
4 tablespoons applesauce
1 t. vanilla
1/2 cup pecans, chopped

Recipe Directions for Pumpkin Oat Bran Muffins

  1. Combine first 7 ingredients in a large bowl; stir well.

  2. Make a well in center of mixture.

  3. Combine pumpkin and rest of ingredients except pecans; stir well.

  4. Add to dry ingredients, stirring just until moistened. Add pecans.

  5. Spoon into muffin pans coated with cooking spray, filling ¾ full.

  6. Bake at 425 degrees for 15 minutes.

  7. Remove from pans immediately; serve warm or at room temperature.
