Lower fat version of pumpkin nut bread recipe (uses applesauce to replace 2/3 of the canola oil.)

Recipe Ingredients for Pumpkin nut bread with whole wheat flour - lower fat

2 cups whole wheat flour
1 1/3 cups all purpose flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
3 cups granulated sugar
1 cup pecans
4 eggs
1 1/2 cups canned pumpkin
1/2 cup canola oil
1/2 cup unsweetened applesauce
2/3 cup water

Topping:
2 tbsp butter
2 tbsp sugar
1/2 tsp cinnamon

Recipe Directions for Pumpkin nut bread with whole wheat flour - lower fat

  1. Blend together dry ingredients, then stir in wet ingredients. Pour batter into two greased loaf pans and bake about one hour at 350.

  2. Prepare topping: melt butter, stir in sugar and cinnamon. Brush over tops of loaves while they are still warm.
