Recipe Ingredients for Pumpkin Nut Bread made with whole wheat pastry flour

3 1/3 cups whole wheat pastry flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
3 cups granulated sugar
60 grams (1 cup) pecans , chopped
4 eggs
1 1/2 cups canned pumpkin
1 cup canola oil
2/3 cup water

Topping:
4 tbsp butter
4 tbsp sugar
1 tsp cinnamon
1 tsp nutmeg

Recipe Directions for Pumpkin Nut Bread made with whole wheat pastry flour

  1. Blend dry ingredients together, then add wet ingredients stirring until dry ingredients are moistened. Pour batter into two greased loaf pans and bake at 350 for about one hour.

  2. Prepare topping: melt butter, stir in sugar and cinnamon. Spread over tops of loaves while they are still warm.
