Recipe Ingredients for Pumpkin Nut Bread with Cream Cheese Filling

4 oz light cream cheese
1/4 cup sugar
1 egg
8 oz light sour cream
2 tablespoons finely chopped crystalized ginger
3 cups flour
2 tsp baking soda
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground nutmeg
1/2 tsp salt
2 cups sugar
4 eggs
15 oz canned pumpkin
1 cup canola oil
1/3 cup water
1 cup chopped pecans
8 tbsp butter, melted
8 tbsp sugar
1 tbsp cinnamon

Recipe Directions for Pumpkin Nut Bread with Cream Cheese Filling

  1. Preheat oven to 350. Grease the bottoms and 1/2" up the sides of two 9x5x3 loaf pans.

  2. Beat cream cheese and 1/4 cup sugar together; add sour cream and one egg. Stir in the crystalized ginger. Set aside.

  3. Stir together flour, baking soda, cinnamon, ground ginger, nutmeg, and salt.

  4. In a separate bowl combine 2 cups sugar, eggs, pumpkin, oil, and water. Beat together until combined. Gradually add the flour mixture; beat until combined.

  5. Put 1 1/2 cups of the pumpkin batter into each loaf pan; divide cream cheese mixture in half and spread into each loaf pan. Cover with remaining pumplin batter.

  6. Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire rack for 10 minutes. Remove from pans.

  7. Melt the butter, stir in sugar and cinnamon. Divide mixture in half and spread on each loaf. Cool completely.

  8. Wrap and store in refrigerator overnight before slicing.

  9. Leftovers will keep up to one week in refrigerator.
