Recipe Ingredients for Pumpkin Muffins

1/2 cup raisins
1 1/2 cups flour
3/4 cup white sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp pumpkin pie spice
2 eggs
15 oz 100% pumpkin
1/2 cup applesauce

Recipe Directions for Pumpkin Muffins

  1. Preheat oven to 350. Grease your muffin pan or line with paper liners. Soak raisins in hot water for 10 minutes to plump, then drain.

  2. Mix the eggs, pumpkin and applesauce in one bowl until smooth. Mix the dry ingredients in another bowl. Dump the first bowl into the 2nd bowl and mix. Mix in raisins. Spoon batter into muffin pan.

  3. Bake for 30 to 35 minutes or until a toothpick comes out clean. (took ~20 minutes for mine)
