Gluten Free - Sugar Free Pumpkin Muffins

Recipe Ingredients for Pumpkin Muffins

6 cups pumpkin
9 eggs
6 teaspoons vanilla
3 cups non-fat dry milk
6 teaspoons cinnamon
8 tablespoons pumpkin pie spice
1 1/2 tablespoon baking soda
2 tablespoons baking powder
4 tablespoons Forti-Flax Ground Flax Seed
4 cups organic raisins
1 cups sliced almonds
1 cup almond meal

Recipe Directions for Pumpkin Muffins

  1. 1 cup pumpkin

  2. 2 eggs

  3. 1 teaspoon vanilla

  4. Mix these ingredients together in one large bowl.

  5. 2/3 cup non-fat dry milk

  6. Stevia to taste

  7. 6 tablespoons of almond flour/meal

  8. 1 teaspoon cinnamon

  9. 2 tablespoons opumokin pie spice

  10. 1 teaspoon baking soda

  11. 1 teaspoon baking powder

  12. mix dry ingredients and then add to wet (pumpkin) mixture using an elecric mixer. spoon into sprayed (Pam, etc) muffin tins. Bake at 350 for 12 - 20 minutes. Makes roughly 12 -18 muffins.
