moist, low cal muffins! (Can sub canola oil for butter)

Recipe Ingredients for Pumpkin muffins

1 cup whole wheat Flour
1/2 cup Sugar
2 teaspoons Baking Powder
1 teaspoon Cinnamon
1/4 teaspoon Ground Ginger
1/2 teaspoon Nutmeg
1/2 teaspoon Salt
4 tablespoons Butter
1 1/4 cup Pumpkin Puree
1/2 cup fat free Evaporated Milk
1 whole Egg
1 teaspoon Vanilla
3 tablespoons brown Sugar
1 teaspoon Cinnamon

Recipe Directions for Pumpkin muffins

  1. Oven to 400.

  2. Mix all dry AND sugar and cut in butter.

  3. Mix all wet.

  4. Fold wet into dry.
