Pumpkin Muffins Recipe

Healthy, relatively low calorie muffins. Especially delicious in the fall!

Recipe Ingredients for Pumpkin Muffins

2 cup pumpkin puree
2 large eggs
127 1/2 g Nonfat Yogurt
3/4 cup applesauce
3/4 cup whole wheat flour
2 cup total cereal
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1/8 cup brown sugar
1/8 cup rolled oats

Recipe Directions for Pumpkin Muffins

  1. Preheat the oven to 400 degrees F.

  2. Combine the dry ingredients minus the brown sugar and rolled oats in a medium sized bowl and set to one side.

  3. Next, mix the pumpkin puree, eggs, yogurt and applesauce together until everything is blended together.

  4. Take the total cereal (or any kind of bran cereal) and put it in a food processor until minced and of a crumb/flour consistency. Should be about 3/4 of a cup minced.

  5. Slowly mix the wet ingredients into the dry, but mix only until just put together or you'll end up with tough muffins. Spoon roughly even amounts of muffin mix into a muffin tin, spraying it with cooking oil if you don't have the paper things.

  6. Next, mix together the rolled oats and brown sugar and sprinkle on top of the muffins in quantities that you choose.

  7. Cook for 18 to 20 min, or until a toothpick inserted in the middle comes out clean.
