Recipe Ingredients for Pumpkin Muffins

1 cup all purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/4 cup splenda brown sugar blend
2 tablespoons splenda brown sugar blend
3 tablespoons molasses
1/4 cup canola oil
2 large eggs
1 cup pumpkin
1 teaspoon vanilla extract
3/4 cup lowfat buttermilk
1/4 cup unsalted pumpkin seeds

Recipe Directions for Pumpkin Muffins

  1. Preheat oven to 400 degrees.

  2. Coat 12-cup muffin pan with cooking spray.

  3. In a medium bowl, wisk together the flours, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.

  4. In a large bowl, wisk sugar, molasses, oil and 1 egg until combined. Add the other egg and wisk well. Whisk in the pumpkin and vanilla.

  5. Whisk in the flour mixture in 2 batches, alternating with the buttermilk. Whisk until combined.

  6. Pour batter into prepared muffin pan and sprinkle with pumpkin seeds. Tap pan on counter a few times to settle air pockets.

  7. Bake 20 minutes or until wooden pick inserted in center of 1 muffin comes out clean.

  8. Let cool on wire rack for 15 minutes. Run knife around the muffins to loosen and unmold. Cool completely on the rack.
