This was a recipe that I learned at weight watchers. The kids love them and it's a great way to get beta-carotine down them with out them knowing it's nutritious.

Recipe Ingredients for Pumpkin Muffins

18 1/4 oz supermoist vanilla
15 oz pure pumpkin

Recipe Directions for Pumpkin Muffins

  1. place cake pkg and can of pumpkin in bowl

  2. mix med-high for 2 minutes

  3. scoop into muffin tin

  4. bake 350 for 25-30 minutes - time could be longer because pumpkin is so dense.
