Recipe Ingredients for Pumpkin Muffins

3 large eggs
3 cups sugar
2 cups all purpose flour
1 cup whole wheat pastry flour
1 cup canola oil
15 ounces canned pumpkin
1 teaspoon baking soda
1/2 teaspoon baking powder
5 1/2 teaspoons cinnamon
1/2 cups dried cranberries
1/4 cup pumpkin seeds

Recipe Directions for Pumpkin Muffins

  1. Combine dry ingredients in the bowl of a stand mixer.

  2. Add wet ingredients and mix on medium for 2 minutes. Stir in craisins. Fill greased muffin tins 3/4 full and sprinkle with pumkin seeds. Bake in a preheated 350 degree F oven for 40-45 minutes. Remove from pan to rack to cool. Makes 24 muffins.
