pretty low cal for muffins! Yay pumpkin!

Recipe Ingredients for Pumpkin Muffins

1 cup canned cooked pumpkin
3/4 cup rolled oats
3/4 cup skim milk
5 tsp agave syrup
4 tsp water
1 tsp vanilla
1 egg
1 1/4 cups all purpose flour
1/3 cup sugar
2 tsp baking powder
2 tsp pumpkin pie spice

Recipe Directions for Pumpkin Muffins

  1. Preheat oven to 400 F.

  2. Mix wet ingredients and dry ingredients separately.

  3. Combine.

  4. Spoon into prepared muffin tin, filling each cup 2/3 full.

  5. Bake 20 minutes or until toothpick inserted in center of muffin comes out clean.

  6. makes 12 muffins
