Slightly sweet, great for breakfast or a snack, very nutmeg

Recipe Ingredients for Pumpkin Muffins

1 1/2 cups flour
2 tsp. baking powder
3/4 tsp salt
1/2 cup sugar
1/2 tsp cinnamon
1/2 tsp. nutmeg
4 tbls butter
1 egg
1/2 cup pumpkin
1/2 cup light soy milk
1/2 cup raisins

Recipe Directions for Pumpkin Muffins

  1. Sift the dry ingredients together into a large bowl.

  2. Combine melted butter, egg, pumpkin, soy milk, and raisins.

  3. Pour liquid mixture into dry mixture and stir to mix.

  4. Pour into buttered cups of muffin pan or paper muffin cups. Sprinkle remaining suger over each muffin before placing in oven.

  5. Bake in preheated 400 degree oven for 20 minutes.
